I want to know everything. I know that the Lord will only tell us what we need to know and no more. I know that it’s not for me to actually know everything there is, but I still want to try. It’s perfect that the wellspring of knowledge never runs dry because mine is an unquenchable thirst. Is this proper? For me to want to know everything about everything? I truely need to know because my greed for understanding and wisdom makes me feel guilty, like I want too much or that I’m aiming too high; like I’m unworthy of such a thing, being a mere mortal. Can you help me sort this out?

There's nothing wrong with wanting to know everything. The pursuit of knowledge can lead you closer to God (who does know everything). In fact, desiring to acquire each of his traits as you come to know them would serve you well. Just be careful not to let your thirst for knowledge get in the way. (i. e. "I won't obey this commandment until I understand why it was given.") Often, faith (without yet having the sure knowledge you seek) is the more direct route to gaining knowledge, and the knowledge God will give may differ from what you were seeking.

Where to start?.. I want to know it all too, but like you stated we are not given everything in this life. We get to learn what God wants us to learn and trust him that all will be revealed when we are ready and equal to learning all.
Like I said above I have a real desire to just get it all known now, but we get to learn the same way Christ learned, line upon line, here a little there a little. I'm sure that God will give you everything you need to know when you are ready. Don't stop asking though, but be prepared to seek it out.
For a quick resolve to the prompting go to our Father in prayer in the name of Christ and ask for his help.
