Hi Rob. In the early years of our religion we did use wine. However, in 1833 the first president of our church, Joseph Smith, received a revelation from God indicating that it is best to avoid wine. In our modern age, wine (or any kind of alcohol, really) can be very destructive. We eventually switched to using water to represent the blood of Christ. I hope this answer helps.
