The towers of the chapels and Temples mean "Eternal Progress" that faithful members will get if they were obedients to the teachings found out in these places.

The towers point upward in remembrance to the place that originated the revelations which prepare us to return to our Heavenly Home.

One of the meanings associated with the towers found in the LDS chapels and Temples is that it represents our thoughts, prayers and best aspirations going up to Heavenly Father. It may also be a symbol of a Tower that is used to warn the nations and to call them to gather in the true Gospel of Jesus Christ.

Not all of our temples have spires. You might find this article on LDS temple architecture interesting. https://en.wikipedia.org/wiki/Temple_architecture_(LDS_Church)
